Secret Story
When I was a young girl (I’m 38 now) I loved to help mum make cakes in the kitchen. Firstly it was so I could lick the beaters and make the icing. In time mum let me make the whole cake on my own which was a lot of fun.
One day mum made a banana cake. I didn’t help her with this one as I didn’t eat bananas and hated the smell of them. But when I tasted the cake I loved it. So from then on that was the only way I ate bananas. Eventually I made the cake myself, getting use to the smell of mashed bananas. I loved the cake so much when I was this young girl I hand wrote the recipe to keep in my recipe folder. I still have this recipe over 20 years later. The paper it was written on is a bit yellowed now but it reminds me of the fun times I had with my mum in the kitchen.
Only in the last 2 years I’ve tried bananas in smoothies and liked it. My mum still jokingly offers me bananas when she sees me and we both laugh when I shake my head.

Preperation Time. 40 minutes.
Cooking Time. 35 minutes.
Recipe Ingredients
4 oz butter 6 oz caster sugar 2 eggs 2 mashed ripe bananas 1 Teaspoon bicarbonate soda 2 Tablespoon milk 1 Teaspoon baking powder 8 oz self raising flour 8 oz philadelphia cream cheese – at room temperature 250 Grams icing sugar 3 Tablespoon butter – at room temperature 1/4 Teaspoon lemon zest
Recipe Instructions
1. Preheat oven to 180C 2. Grease and flour a 23cm round cake tin 3. Cream 4 oz butter and caster sugar with electric beaters until white and fluffy. 4. Add eggs and mashed bananas, mix well. 5. In a microwave proof bowl add milk and microwave on high for 30 seconds. Then add bicarbonate soda to milk, stir to dissolve. Let it froth and cool slightly. Add this to other ingredients and mix well. 6. Sift flour and baking powder and add in batches to cake mixture. Mix well. 7. Pour mixture into cake tin. Bake for 35mins at 180C. 8. Allow cake to cool before spreading the icing over the cake thickly. 9. To make icing: Cream cream cheese until smooth and soft 10. Add 3 tablespoons butter and mix until smooth 11. Add the icing sugar slowly until mixed 12. Add lemon zest and mix well
